1/4tspcayenne pepper- increase to 1/2 tsp for spicier patties
2tbsptapioca flour*
salt & pepperfor seasoning
coconut oilor olive oil, for frying
Instructions
Finely grate carrot and place in a large bowl.
In another small bowl, crack and whisk the egg.
Add the whisked egg and all other patty ingredients in the large bowl (I like to combine everything, then sprinkle the flour over the top and combine this last, to avoid flour lumps). Season with salt and pepper as desired.
Shape mixture into patties - I usually make eight small patties, or four larger ones.
Heat a large pan (I often use a grill pan) and add a tablespoon of coconut oil. Cook the patties over a moderately high heat for 6-7 minutes on each side, depending on thickness you may need to adjust this time a little.
Serve with sides of your choice!
Notes
*You can substitute turkey mince for the chicken mince for something different!*You could also use rice flour instead of tapioca flour in this recipe.
