Enjoy your dessert for breakfast with this Cinnamon Apple Pie Porridge! Beautifully creamy rolled oats cooked with whole milk, apple and spices makes a healthy and delicious way to start the day.
¾cupfull cream milkI used Dairy Farmers A2 Goodness
¾cupwater
½tspvanilla extract
½tspground ginger
1tspground cinnamon
1tbspcoconut sugar or brown sugar
coconut oil or olive oilfor cooking
honey or maple syrup to serve
Instructions
Grate one apple and dice the other. Set the grated apple aside. Add the diced apple to a frypan with 2 tsp coconut oil and a splash of water. Cook the apple until softened, around 7-10 minutes, adding a little extra water if it starts to stick. For the last minute of cooking add the coconut sugar and a pinch of cinnamon, and stir so the apple is coated.
Set aside the cooked apple. Take a small saucepan and add the grated apple, rolled oats, flaxseed, Dairy Farmers A2 Goodness full cream milk, water, vanilla, ½ tsp ginger and ½ tsp cinnamon. Cook over a medium heat, stirring gently until thick and creamy, around 5-7 minutes. Add extra milk or water to the porridge if it starts to become too thick.
Serve the porridge hot, topped with the pan fried apple pieces, a sprinkle of cinnamon and a drizzle of honey. Tip: add some nuts or seeds for crunch, too!
Notes
p.s. I highly recommend adding some crunchy nuts and seeds on top too. I love walnuts and apple together and also added my favourite pumpkin seeds in the porridge pictured.
