These slow cooked soy braised chicken thighs are delicious, tender and incredibly easy to make! Pop all the ingredients into the slow cooker and have a healthy dinner ready with absolutely no fuss. Made gluten free using gluten free soy sauce!
1/2cupgluten free soy sauce or tamari(you can just use regular soy sauce but I wanted this dish to be gluten free)
1/3cupapple cider vinegar
2tbspmaple syrup or honey
1tbspsesame oil
1/3cupwater
2clovesgarlic, peeled and crushed*see notes
2tspminced/grated ginger*see notes
Optional, to serve
spring onion
sesame seeds
rice
steamed greens
Instructions
Combine all of the braising sauce ingredients in a bowl or jug. Set aside.
Peel and thickly slice the onion. Chop the carrots into rounds about 1cm thick.
Place the chicken thighs, carrot and onion evenly inside the base of the slow cooker. Pour the braising sauce on top and press everything into the sauce so it all gets coated.
Cook the chicken on high for 4 hours. Done! Sprinkle over chopped spring onion and sesame seeds before serving, and serve with rice and steamed greens.
Notes
*This recipe is all about the EASY and the CONVENIENT. So, with that in mind, please know that you can definitely use minced garlic and/or minced ginger from a jar in this recipe. I have done this often. I buy an organic minced ginger and minced garlic that don't have any additives and always have them in the fridge!*I love the braised carrots in this recipe but you don't have to add them if you don't want. Highly recommend them though as they soak up lots of flavour from the braising sauce which works perfectly with their sweetness.
