Cook Time 15 minutes
Servings 1 300-350 mL jar, approximately

  • 2 cups frozen berries - any variety or a mixture
  • 4 tbsp chia seeds
  • 3-4 tbsp honey or any liquid sweetener of choice e.g. maple syrup, coconut syrup, rice malt syrup
  • 1/4 cup water
  • 2 tsp vanilla extract

  • Place frozen berries in a pan with 1/4 cup water melt over a low heat on the stove top, stirring and breaking them up gently so they turn into a slightly chunky puree.
  • While the berries are softening add in the vanilla, chia seeds and 3 tbsp of honey/liquid sweetener and stir to combine. Taste test and add extra honey/liquid sweetener if desired.
  • Remove from heat and allow to cool in the saucepan for 10 minutes or so. Stir once or twice to make sure the chia seeds are evenly incorporated.
  • Transfer to a clean, sterile jar and refrigerate until cooled and set; it will thicken even more as it cools. This should keep for two weeks or even a little longer.

*Want to go completely sugar free? Honey, maple syrup etc. are all a form of sugar, really (I do think they're an improvement on refined white table sugar but anyway). If you want to be sugar free you can sweeten this jam with stevia instead - either liquid drops or a powdered version. Stevia is much sweeter gram for gram than these liquid sweeteners, so just add a little and taste test to get the ratio right.
