Smoked Mackerel Superfood Salad by Nourish Everyday

This month I have been madly hunting down easy, tasty recipes to inspire some new and exciting salads for my work lunch box in the new year. I pretty much eat a salad in some form for lunch every day. While that might sound boring to you at first, when you really get to thinking about the infinite ways you can mix up a “salad”, you’ll see that it’s really not boring at all! Banish any thoughts of limp lettuce and a few blobs of tomato and cucumber. Making a colourful salad is a flavoursome and satisfying way to incorporate a huge dose of veggies (and protein + healthy fats) in to your daily eating habits, which is essential for your general health.

To encourage you to embrace as many salads as possible, I’ve rounded up 18 delicious recipes below for inspiration. Some are complete meals while some would be perfect topped with a protein of your choice. You can always make a double-batch of your favourites to set yourself up for the week, too!
