I’m excited to announce a month of healthy recipes for Pureharvest*, starting with this gorgeous Chocolate Banana “Nice Cream” Cake. Gluten free, dairy free and vegan, this creamy dessert is simply blended together and frozen. No baking required!
There are a few brands that always appear in my shopping trolley, and Pureharvest is one of them. They’re probably one of Australia’s most loved and widely known natural products brand, with a range of non-dairy organic milks, spreads, sauces and more. I’m not sure I could get through the week without their Coco Quench milk, and snack times are always greatly improved with Pureharvest organic rice cakes to spread with chia jam and nut butter.
So of course, I’m SUPER happy to be partnering with Pureharvest in April and share with you a series of FOUR yummy recipes incorporating some of my favourite products.
Kicking things off is my Chocolate Banana Nice Cream Cake. Creamy cashew banana “nice cream” layers on top of a chewy date-buckwheat-walnut base. It’s such a warm week here in Sydney (slightly unusual for this time of the year) that this cake is exactly what I need right now!
In this recipe you are going to find a couple of my classic, old-favourite Pureharvest products, plus one that’s a more recent discovery:
- Coco Quench – a blend of coconut and rice milk, with NO nasty additives. Perfect for making lattes (mmm especially turmeric lattes!), porridge and smoothies;
- Rice Malt Syrup – a light, gentle sweetener with a slightly malty flavour. I love using it in baking, raw desserts and for drizzling on my morning stake of pancakes; and
- Coco2 Almond Spread – this is relatively new to me but I’m loving this chocolatey, sweet treat spread! It’s a blend of rice malt syrup, almonds, cocoa, coconut, vanilla and sea salt. Yep. Drool.
The great thing about making a Chocolate Banana Nice Cream Cake (aside from the fact that it’s no bake) is that you can tuck it away in the freezer, where it’ll last for a few months. Created in a loaf tin, it slices up easily and ensures you a steady supply of creamy, delicious dessert. Unless you were planning on sharing it around of course… 🙂
